Fraser-Cummings Marcia, Mrs
Fraser-Cummings’ research and teaching focus on the challenges associated with the production of baked products using indigenous farinaceous provisions. As a result of her interest, she has also done significant work evaluating students' research, done in conjunction with The Scientific Research Council in the area of experimental foods.
In the School of Hospitality and Tourism Management, she teaches on the Food Service Management Programme, sits on the College’s CSSAC Committee and liaisons with industry partners as an Internship and awards coordinator.
